The Walkers-style butter cookies with Kanuni Coffee's fresh coffee

Caffè tipo Walkers al caffè fresco by Kanuni Coffee

 


Ingrediants:

- 200 gr Butter

- 280 gr Flour 00

- 100 gr brown sugar

- 1 tablespoon of honey

- 1 coffee cup

- 1 or 2 tablespoons of rum (optional)

- a pinch of salt (optional)

 

Procedure:

Take a bowl with high sides and add the butter (previously left to soften - about half an hour before), sugar, flour, honey and rum.

Start kneading with your hands and during this process add the coffee.

When the ingredients are well blended, transfer the sticky dough onto a work surface and continue kneading until it becomes smooth and homogeneous; I recommend before working it add a little flour and if necessary continue adding a little at a time, a bit like you do with pizza dough !!

When the dough is ready, homogeneous and smooth, freely shape your biscuits; I made them rectangular using a knife and a fork, you are free to use all the tools you want.

If you want, with part of the dough, you can try adding a pinch of salt, just like in the original recipe for Scottish biscuits, or increasing the amount of flour to make them more CRUNCHY!

Bake in the oven at 160C ° for about 25/30 minutes, and please pay attention because each oven is different, the intent is to keep the biscuit soft and buttery inside but still well cooked.
