Each coffee we supply is of ethical origin, respectful of the surrounding environment and cultivated with the utmost care; we only use processes that are optimal for the surrounding habitat, and for this we source grains from numerous small family farms or selected local cooperatives. No automated collection or low quality processes; our coffees are hand selected among the best in the world!

The "washed" method is the most widespread and produces high quality coffee; with the washing you can taste the heart itself, its origin, variety and terroir, without any impact on the processing method. The "dry or natural process" is the oldest preparation method, in use for hundreds of years; with this method the drupes are placed on a flat surface, where they are washed and dried in the sun.

Depending on the washing method used, the drying phase is always performed by hand and in a completely natural way in the sun, on different types of "beds", such as wooden panels or various other types of drying areas.

The roasting of the coffee beans takes place with proven quality roasters that allow us to carry out a perfect roasting, helping the bean to express all its aromatic capacity, organoleptic uniformity and extraction.
